Overview
This talk will focus on the various transformations of Chinese food in the US as it comes into contact with the practices of people from other ethnic origins (Italian, Jewish), both in ethnic urban enclaves like Chinatowns and in the standardized environments created by corporations. The presentation will be followed by an open discussion, in which students can also share their points of view on mainland Chinese and Western foods, as well as other forms of cross-cultural eating in Taiwan today, and how these experiences contrast with traditional/indigenous practices.
